Soft Italian Biscotti

Makes about 3 dozen

FOR THE COOKIES:

  • 1 stick unsalted butter, room temperature

  • ½ cup sugar

  • 3 eggs

  • 1 teaspoon baking powder

  • 1/4 cup milk

  • ½ teaspoon baking soda

  • 3 cups flour

  • 2 tsp vanilla extract

FOR THE ICING:

  • 2 cups powdered sugar

  • 4 tablespoons milk

  • ½ teaspoon vanilla extract

  1. Preheat oven to 400°F. Line baking sheets with silicon mats and set aside.

  2. In an electric mixer with the paddle attachment, cream the butter and sugar together until light and fluffy. (about 3 minutes)

  3. Add eggs, milk & vanilla and mix to combine.

  4. Add all the dry ingredients and blend together.

  5. Use about one tablespoon of dough and roll out into a rope and then twist into the desired shape.

  6. Bake for about 10 minutes.

  7. While the cookies cool, mix the icing.

  8. Dip the cooled cookie tops in the icing (will be a bit runny) and top with sprinkles if desired.

  9. Let icing dry completely before storing an an airtight container.
