Chocolate Panna Cotta

Serves 4-6 people

  • 3 cups heavy cream

  • 1.5 cups milk

  • 8 oz chocolate dark (chopped)

  • 1 vanilla bean cleaned well

  • 1 cup sugar

  • 7 sheets gelatin

 Method:

  1. Allow sheets of gelatin to sit in ice water until very soft (should become spongy and should take only a couple of minutes). Squeeze out as much of the water as possible.

  2. Add milk, cream, sugar, and cleaned vanilla to a suitable sized small pot and bring up to a simmer, continually stirring until you have a combined all the ingredients well and the chocolate has dissolved entirely. Remove liquid from the heat, squeeze gelatin VERY WELL, and add to the liquid, turn off the heat and then pour into desired vessel (container, cups, molds etc.)

  3. Serve with fresh fruits, whipped cream or toasted nuts!
