Prosciutto-Wrapped Asparagus with Parmesan cheese

Serves: 24

Ingredients

  • 12 slice prosciutto, cut in half

  • 24 slice jumbo asparagus spears, 4 inches long

  • 8 ounce butter, melted

  • 8 ounce parmesan, cheese

  • 1 ounce lemon

Method

  1. Preheat oven to 350° F.

  2. Bring a pot of lightly salted water to a boil, add asparagus and blanch for 1 minute, or until just tender.

  3. Drain asparagus, pat dry, and brush with melted butter, then roll the spears in grated Parmesan.

  4. Wrap each asparagus spear in one half of a slice of prosciutto.

  5. Align asparagus spears one layer deep in a large baking dish brushed with melted butter.

  6. Sprinkle with Parmesan cheese and cracked black pepper to taste.

  7. Bake for 6 to 8 minutes.

  8. Squeeze fresh lemon juice over the asparagus and serve.
