Heirloom Tomato and Watermelon Salad
Serves 4 people
½ of 1 medium red or yellow watermelon (seedless – medium/ large diced)
2 large heirloom tomatoes (any color – medium diced)
1 cup baby heirloom tomato (cut in ½)
4 oz balsamic glaze
4 oz ricotta salata, grated fine
6 oz olive oil
4 oz raspberry vinegar
4 leaves mint chopped
½ cup chopped parsley
Salt & pepper to taste
Method:
1. Take diced watermelon and tomatoes and add into a medium sized mixing bowl. Add olive oil and raspberry vinegar.
2. Add mint leaves and toss well. Season with salt and pepper.
3. Place all ingredients onto a suitable sized plate/ platter and glaze with the balsamic.
4. Once plated, grate the ricotta salata over the salad. Garnish with parsley and a light drizzle of olive oil & serve as cold as possible.
