Blood Orange Panna Cotta

For caramel

  • ½ cup sugar

  • ½ teaspoon lemon juice

  • 2 tablespoon hot water

For cream

  • 2 cups blood orange juice

  • 2 cups unflavored gelatin

  • 4 cups heavy cream

  • 1 cup sugar

METHOD:

To make caramel

  1. Put lemon juice and ½ cup sugar into heavy pot.

  2. Cook over high heat, swirling often, until sugar caramelizes.

  3. Add hot water "carefully"… caramel will splatter and is very hot.

  4. Pour caramel into the bottom of mold.

To make cream

  1. Sprinkle gelatin over orange juice in a small saucepan, set aside to soften.

  2. Combine cream and sugar in another saucepan, and heat just to dissolve sugar.

  3. Heat orange juice and gelatin gently to melt gelatin.

  4. Combine orange juice mixture and cream mixture.

  5. Pour into prepared mold, and refrigerate overnight.

  6. To remove mold, invert onto serving platter just before serving.
